From time to time we may run out of a listed item, when that happens you may receive a substitution. Grocery stores typically have around 40% waste in their produce departments. At St. Louis Produce Box, we have less than 10% waste. In an effort to keep waste low and prices reasonable, substitutions are sometimes made.

What is Jicama?
Jicama (HEE-kah-ma), sometimes referred to as yam bean, Mexican turnip, or Mexican potato, is an edible root vegetable native to Mexico. It’s a wonderfully juicy, sweet, and nutty tuber with a distinct crunch. It is most commonly enjoyed raw, but you can cook jicama, too. Its white flesh stays crisp when cooked briefly.
What does it taste like?
Imagine a savory apple. Crunchy, crisp, and juicy.
How do I eat it?
Cut off the thick, paper skin with a chef’s knife. It is often eaten raw, with chili powder and lime juice. Jicama makes an excellent salsa — a perfect match for a tortilla chip or to top a taco. Tuck Jicama matchsticks into fresh spring rolls.
